Chicken and Sausage Jambalaya Recipe
Ingredients:
2 large chicken breasts, cut into bite-sized pieces
1 tsp kosher salt
1/4 tsp black pepper
1 pack of Andouille sausage
1 1/2 cups long-grain rice
4 cups low-sodium chicken broth
1/3 cup diced green bell pepper
1/3 cup diced yellow onion
1/3 cup diced celery
2 tbsp olive oil
1 tbsp tomato paste
1/2 tbsp garlic paste
2 tbsp divided Cajun seasoning
For the Cajun Seasoning:
2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp thyme
1 tsp oregano
1/4 tsp black pepper
1/4 tsp cayenne pepper
1/4 tsp salt
Instructions:
1. Combine all the ingredients for the Cajun seasoning and set aside. 2. Season the chicken with kosher salt and black pepper. 3. In a pot over medium-high heat, add olive oil, sausage, and cook for 3-4 minutes. Remove and set aside. 4. In the same pot, add chicken and cook until it's 90% done, about 3-4 minutes. Remove and set aside. 5. Sauté the 'holy trinity' of bell pepper, onion, and celery for 1-2 minutes. 6. Stir in garlic and tomato paste, then add rice and toast for another 1-2 minutes. 7. Pour in chicken broth, add the chicken and sausage back into the pot, and stir well. 8. Bring to a boil, then cover with a lid, reduce heat to medium-low, and let it cook for 15-20 minutes, stirring occasionally. 9. Once the broth has evaporated and the rice is tender, your jambalaya is ready to serve. Enjoy!
